Creamy Corn Chowder Recipe

Ingredients

  • 4 cups sweet corn
  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Add onions and potatoes to the pot and sauté until softened.
  3. Stir in the corn and cook for another 5 minutes.
  4. Add vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Blend with an immersion blender until desired consistency is reached.
  6. Stir in heavy cream and smoked paprika. Season with salt and pepper. Serve hot.

Notes

  • Top with additional bacon and fresh herbs if desired.
