Creamy Chicken Tortilla Soup

  • 2 cups shredded cooked chicken
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 cup corn kernels
  • 1 can (4 ounces) diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup tortilla strips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.
  2. Add shredded chicken, diced tomatoes, chicken broth, corn, green chilies, cumin, and chili powder. Season with salt and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in heavy cream and heat through.
  5. Serve hot, garnished with tortilla strips, cheese, and cilantro.

Notes
