- 1 pound chicken breast, cooked and shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup heavy cream
- 1 cup tortilla chips, crushed
- 1 cup shredded cheese, cheddar or Mexican blend
- 1 lime, juiced
- 1/4 cup cilantro, chopped
- In a large pot, heat olive oil over medium heat. Add onions and cook until softened.
- Add garlic, cumin, and chili powder, and cook for another minute.
- Stir in chicken broth, tomatoes, black beans, and corn; bring to a boil.
- Reduce heat and add shredded chicken and heavy cream. Simmer for 10 minutes.
- Season with lime juice, salt, and pepper to taste.
- Serve hot, topped with crushed tortilla chips and shredded cheese.
