  • 1 pound chicken breast, cooked and shredded
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup heavy cream
  • 1 cup tortilla chips, crushed
  • 1 cup shredded cheese, cheddar or Mexican blend
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and cook until softened.
  2. Add garlic, cumin, and chili powder, and cook for another minute.
  3. Stir in chicken broth, tomatoes, black beans, and corn; bring to a boil.
  4. Reduce heat and add shredded chicken and heavy cream. Simmer for 10 minutes.
  5. Season with lime juice, salt, and pepper to taste.
  6. Serve hot, topped with crushed tortilla chips and shredded cheese.

Notes
