- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup heavy cream
- 1 cup tortilla strips
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until softened.
- Stir in the shredded chicken, black beans, corn, diced tomatoes, chicken broth, cumin, and chili powder.
