  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup uncooked rice
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned.
  2. Add carrots, celery, onion, and garlic; sauté until vegetables are tender.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the rice and simmer for 20 minutes, or until rice is cooked.
  5. Stir in the heavy cream, salt, and pepper; heat through.
  6. Serve hot, garnished with parsley if desired.
