Creamy Alfredo Lasagna Soup

This Creamy Alfredo Lasagna Soup is the ultimate comfort food that combines the creamy flavors of alfredo sauce with the heartiness of lasagna.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 12 sheets lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef, onion, and garlic; cook until meat is browned and onion is translucent.
  2. Stir in chicken broth and bring to a boil.
  3. Add the broken lasagna noodles, heavy cream, and Italian seasoning. Cook according to noodle package directions.
  4. In a bowl, mix ricotta cheese with salt and pepper.
  5. Once the noodles are cooked, stir in the ricotta mixture and half of the mozzarella cheese until melted and combined.
  6. Serve hot, garnished with remaining mozzarella and Parmesan cheese.

Notes

  • For added flavor, top with fresh basil before serving.
  • This soup can be made ahead of time and reheated.
