Cowboy Soup

Cowboy Soup is a hearty dish that combines turkey bacon and chicken ham for a delightful meal.

Ingredients

  • 6 slices turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 3 cups chicken broth
  • 1 can corn, drained
  • 1 can kidney beans, drained and rinsed
  • 2 cups cooked chicken ham, diced
  • 1 tablespoon taco seasoning
  • 2 cups mixed vegetables
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Sauté onion and garlic in the same pot until translucent.
  3. Add diced tomatoes, chicken broth, corn, kidney beans, cooked chicken ham, and taco seasoning. Stir well.
  4. Bring the soup to a boil, then reduce heat and simmer for 30 minutes.
  5. Add mixed vegetables and cook for another 10 minutes.
  6. Season with salt and pepper to taste. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a spicier kick, add jalapeños.
  • Can substitute turkey bacon with regular bacon if preferred.
