Cottage Cheese Egg Bake

A delicious and nutritious cottage cheese egg bake packed with turkey bacon and fresh veggies.

  • 6 large eggs
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1/2 cup cooked turkey bacon, crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, and spices.
  3. Add the chopped spinach, bell peppers, and cooked turkey bacon, mixing well.
  4. Pour the mixture into a greased baking dish.
  5. Sprinkle cheese on top if desired.
  6. Bake for 30-35 minutes or until the center is set.
  7. Let it cool before slicing and serving.
