Coconut Icebox Cake

A refreshing and delightful dessert that captures the essence of coconut in every bite.

  • 1 cup shredded coconut
  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 package graham crackers
  • 1/2 cup cream of coconut

Instructions

  1. In a large bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form.
  2. Gently fold in the shredded coconut and cream of coconut.
  3. Layer the bottom of a rectangular dish with graham crackers.
  4. Spread a layer of the coconut mixture over the crackers.
  5. Repeat the layers until all ingredients are used, finishing with the coconut mixture on top.
  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Slice and serve chilled.

Notes

  • For extra decoration, top with additional shredded coconut before serving.
