- 1 cup shredded coconut
- 2 cups heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 package graham crackers
- 1/2 cup cream of coconut
- In a large bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form.
- Gently fold in the shredded coconut and cream of coconut.
- Layer the bottom of a rectangular dish with graham crackers.
- Spread a layer of the coconut mixture over the crackers.
- Repeat the layers until all ingredients are used, finishing with the coconut mixture on top.
- Cover and refrigerate for at least 4 hours or overnight.
- Slice and serve chilled.
