Ingredients

  • 4 large russet potatoes
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 2 cups vegetable oil for frying

Instructions

  1. Peel the potatoes and cut them into logs.
  2. Soak the potato logs in buttermilk for at least 30 minutes.
  3. In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, and black pepper.
  4. Dip each potato log in the flour mixture, then in beaten eggs, and back in the flour mixture.
  5. Heat oil in a skillet over medium heat and fry the logs until golden brown, about 5-7 minutes per side.
  6. Remove from oil and drain on paper towels.

  • For extra crunch, double coat the potato logs by repeating the egg and flour steps.
