Delicious and easy Chicken Enchilada Soup perfect for cozy nights.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound chicken breasts, cooked and shredded
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 can corn
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheese, for serving
  • 1/4 cup fresh cilantro, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
  2. Add shredded chicken, diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve hot with cheese and cilantro on top.

Notes

  • For a spicier version, add jalapeños.
  • This soup can be made ahead and reheated.
