  • 1 large sweet potato
  • 1 medium onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 flatbreads
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peeled and cubed sweet potatoes in a pot of boiling salted water for about 10 minutes or until tender, then drain.
  3. In a skillet, heat olive oil and sauté chopped onions until translucent.
  4. Add diced chicken, garlic powder, paprika, salt, and pepper to the skillet; cook until chicken is fully cooked.
  5. Spread sweet potatoes on flatbreads, top with the chicken mixture, and sprinkle cheese on top.
  6. Place in the oven and bake for around 10 minutes or until cheese is melted.
  7. Slice and serve warm.
