- 1 large sweet potato
- 1 medium onion
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 flatbreads
- 1 cup shredded cheese
- Preheat the oven to 400°F (200°C).
- Peeled and cubed sweet potatoes in a pot of boiling salted water for about 10 minutes or until tender, then drain.
