Caramelized Leek and Mushroom Gruyere Pasta

A delicious and comforting pasta dish featuring caramelized leeks and mushrooms paired with Gruyere cheese.

  • 2 tablespoons olive oil
  • 3 leeks, cleaned and sliced
  • 8 ounces mushrooms, sliced
  • 12 ounces pasta of choice
  • 1 cup grated Gruyere cheese
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced leeks and cook until soft and caramelized, about 10 minutes.
  3. Stir in the sliced mushrooms and cook until they are tender.
  4. Meanwhile, cook the pasta according to package instructions; drain.
  5. Add the cooked pasta to the skillet with leeks and mushrooms.
  6. Stir in the grated Gruyere and heavy cream. Mix until well combined and the cheese melts.
  7. Season with salt and pepper. Mix in fresh parsley before serving.
