Buffalo Chicken Enchiladas

Delicious buffalo chicken enchiladas that are simple to prepare and packed with flavor.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup buffalo sauce
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup chopped green onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together shredded chicken, buffalo sauce, cream cheese, garlic powder, and onion powder until well combined.
  3. Place some of the mixture in each tortilla, roll them up, and place them seam-side down in a greased baking dish.
  4. Top with remaining buffalo sauce and cheddar cheese.
  5. Bake for 20-25 minutes or until heated through and cheese is bubbly.
  6. Garnish with chopped green onions before serving.

Notes

  • Adjust the spiciness by varying the amount of buffalo sauce.
  • Serve with ranch or blue cheese dressing for dipping.
