A delicious recipe for breakfast enchiladas featuring turkey bacon.

  • 8 large eggs
  • 1 cup turkey bacon, chopped
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 cup salsa

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the chopped turkey bacon until crispy.
  3. Whisk the eggs in a bowl and pour them into the skillet, scrambling until cooked.
  4. Remove from heat and stir in half of the cheese.
  5. Place a portion of the egg mixture in the center of each tortilla, roll them up, and place them seam-side down in a baking dish.
  6. Top with salsa and the remaining cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.

Notes

  • For added flavor, include chopped bell peppers or onions.
  • Top with avocado slices for a creamier texture.
