  • 1 pound ground beef
  • 2 cups beetroot, diced
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, cooking until soft.
  2. Add ground beef and cook until browned.
  3. Stir in diced beetroot and tomato paste, cooking for a few minutes.
  4. Pour in beef broth and bring to a simmer.
  5. Add the cooked pasta and season with salt and pepper. Simmer for 5 minutes.
  6. Serve hot, garnished with fresh dill.
