  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (28 ounces each) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the garlic and cook for another minute.
  3. Add the crushed tomatoes, vegetable broth, sugar, basil, salt, and pepper. Simmer for 20 minutes.
  4. After simmering, remove from heat and use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream and crumbled turkey bacon just before serving.
  6. Garnish with extra crumbled turkey bacon if desired.
