  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 slices turkey bacon
  • 1 cup fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Set aside.
  2. In the same skillet, add olive oil and sauté the spinach until wilted.
  3. While the spinach cooks, toast the bread slices until golden brown.
  4. In a bowl, mash the avocado and season with salt and pepper.
  5. Spread the mashed avocado onto the toasted bread.
  6. Top the avocado with sautéed spinach and crispy turkey bacon.
  7. Serve immediately.

Notes
