Ingredients

  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup sugar
  • 5 apples, peeled and diced
  • 1 cup milk
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, combine flour, baking powder, cinnamon, nutmeg, and sugar.
  2. In another bowl, whisk together milk, eggs, vegetable oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in the diced apples.
  5. Heat a frying pan with oil over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and cook until golden brown on both sides.
  7. Remove and drain on paper towels.
  8. Serve warm with powdered sugar on top.

Notes

  • For extra flavor, add a dash of lemon juice to the apples.
