African Peanut Stew

  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 medium sweet potatoes, diced
  • 2 cups kale, chopped
  • 1 can diced tomatoes
  • 1 tablespoon curry powder

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, and ginger; sauté until onions are translucent.
  2. Add sweet potatoes, diced tomatoes, and vegetable broth. Bring to a simmer.
  3. Stir in curry powder and peanuts. Cook for 20 minutes until sweet potatoes are tender.
  4. Stir in kale and cook until wilted. Adjust seasoning as needed.
