- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 sweet potatoes, cubed
- 1 cup spinach, chopped
- 1 teaspoon chili powder
- 1 teaspoon cumin
- salt to taste
- 2 tablespoons olive oil
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until translucent.
- Add sweet potatoes and cook for a few minutes.
