African Peanut Stew

  • 1 cup peanut butter
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 sweet potatoes, cubed
  • 1 cup spinach, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until translucent.
  2. Add sweet potatoes and cook for a few minutes.
  3. Stir in diced tomatoes, vegetable broth, peanut butter, chili powder, and cumin.
  4. Bring to a boil, then reduce to a simmer and cover, cooking for 20-30 minutes until sweet potatoes are tender.
  5. Add spinach and cook for another 5 minutes.
  6. Season with salt to taste and serve warm.
