A delicious and quick recipe for Coconut Thai Salmon Curry that can be made in just 30 minutes, perfect for busy weeknights.

Ingredients

  • 2 salmon fillets
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • fresh basil for garnish
  • 2 cups jasmine rice, cooked

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add salmon fillets and bell pepper, cooking until the salmon is flaky.
  6. Stir in fish sauce and lime juice.
  7. Serve over cooked jasmine rice and garnish with fresh basil.
